CHRISTMAS EGGNOG: HOW-TO VIDEO
A dreamy & creamy eggnog recipe that is sure to put you on Santa's "nice list"
3 pasteurized eggs (separated)
3 tablespoons of sugar ( 2 tbsp added into yolks + 1 tbsp added into whites)
30ml Dark Rum
1 Cup Spice-Infused Whole Milk*
¾ Cup Double Cream
*Spice-Infused Milk Recipe:
In a saucepan, gently heat whole milk with 1 cinnamon stick, 1 vanilla bean
pod (split and seeds removed) and a teaspoon of freshly grated nutmeg.
Once heated thoroughly, remove from heat and let fully cool, allowing the spice to steep.
Once cooled, fine strain out cinnamon sticks and vanilla pod.
In a bowl, whisks 3 separated egg yolks and add 2 tablespoons of sugar.
Continue whisking and add 30ml rum, 30ml cognac, 30ml bourbon and 1 cup of the spice-infused milk*.
In a separate bowl, whisk 3 egg whites to soft peaks then add a tablespoon of
sugar. Fold this into your first bowl mixture.
Then in the empty egg white bowl, whisk ¾ cup double cream to soft peaks. Fold into main mixture and pour into a sealable container.
Refrigerate overnight and reinvigorate with a shake before serving. Pour into a glass and garnish with freshly grated nutmeg.
